Kilkea Castle Appoints David McKane As Head Chef & Culinary Director

AWARD-WINNING CHEF MIXES IRISH FLAVORS WITH MODERN FRENCH FARE TO CREATE EXCITING NEW CUISINE AT LUXURY HOTEL & GOLF RESORT

COUNTY KILDARE, IRELAND – June 11, 2019 – David McKanehas been appointed the new Culinary Director and Head Chef at Kilkea Castlein County Kildare, Ireland.  The talented 34-year old from Mountmellick County Laois is now in charge of the culinary experiences at the luxury hotel and golf resort and has developed a magnificent selection of menus that blend modern Irish cuisine with classic French influences.

Chef McKane, who was most recently the Head Chef at the famed Adare Manor, has extensive experience in fine dining and hospitality. Before that he was the Sous Chef at the award-winning, five-star Ballyfin Demesne Hoteland Sous Chef at the Lyrath Estate Hotel.  He now brings his vast experience, signature style and culinary philosophy to develop the dining offerings at Kilkea Castle.

Heavily involved with local suppliers, Chef McKane bases his fare around key local artisan producers and looks for seasonal offerings that are sourced from ethical suppliers. The result is a variety superb menus, which are a mélange of tradition and innovation.  

Throughout the resort, which has undergone a 6 year, $30 million restoration and refurbishment, Chef McKane is creating contrasting dining experiences that will enable guests to enjoy different menus daily. Signature items are found at every meal, from Kildare Farm Sausagesand Duncannon Smokehouse Salmonat breakfast to the Dexter Beef Burgerand fresh Hake from CS Fishat lunch, to Monesterevan Farm duck and seasonal soufflé at dinner.

With Chef McKane now at the helm, Kilkea Castle is sure to be a dining destination and must stop on the map as part of Ireland’s growing culinary scene.   

Restaurant 1180

Situated within the castle, Restaurant 1180 invites guests to explore the culinary treasures of Ireland in a beautifully appointed, private dining room overlooking the Rose Garden.  Chef McKane creates delicious a la carte and seasonal menus taking great care to source the highest-quality ingredients from Irish artisan producers and local suppliers.  Fresh seafood, ethically farmed meats and game, hand-made pastas, locally sourced cheeses and gorgeous fruits and vegetables are used to create innovative and refined dishes. A curated wine-list offers pairings that complement each dish.

Opening Hours:Breakfast - 8am to 11am Dinner - Friday & Saturday – 6.30pm to 9.30pm 

Afternoon Tea in the Drawing Room 

Overlooking the beautiful Rose Garden, Afternoon Tea is a refined and luxurious experience served in the Drawing Room in the castle. This offerings include delightful confections, hand cut sandwiches, delicious miniature pastries, fresh baked scones served with clotted cream paired with either a selection of exquisite teas from around the world or a glass of bubbly.

Hermione's Restaurant

Exceptional food and impeccable service in a stylish and comfortable atmosphere are the hallmarks of Hermione’s Restaurant. Situated in the Clubhouse overlooking the castle and the golf course, the eatery offers a welcoming and sophisticated setting for lunch or dinner with an exciting menu that features artisan ingredients sourced from across Ireland. A favorite is the Original Sunday Roast, for which Chef McKane and his team visit farms and select the finest cut of Irish Hereford Prime Beef Rib in the Country.

The Bistro

Satisfying fare, great company and a legendary collection of the world’s finest libations come together to create an extraordinary atmosphere at The Bistro. From freshly brewed coffee and light bites to an aperitif before dinner, The Bistro offers a warm and inviting setting that overlooks the castle and 18-hole golf course.  The kitchen is open all day and the menu is extensive, offering everything from hearty breakfasts to wholesome main courses.

The Keep

Located in the castle, The Keep is a well-stocked traditional Irish pub that offers a warm and inviting haven for lovers of fine spirits and ambiance. The bar offers an extensive selection of bespoke cocktails created by an expert mixologist which are made with a wide range of specialty liqueurs, bitters and infusions, many hand-crafted with ingredients from Kilkea’s gardens. The Keep also boasts a variety of premium Guinness, craft beers, rare whiskeys, and curated wine list. Tea, coffee, pastries and beverages are served along with a variety of savory snacks and platters.

Whiskey & Chocolate Tasting

You will be taken on an exploration on the vibrancy of three Irish whiskeys paired with decadent artisanal chocolates, guided by an expert member of the team. Kilkea Castle’s whiskey collection includes many legendary Irish distilleries, such as Jameson, Irish Pot Still, Green Spot and Writer’s Tears. To create a unique and compelling tasting menu, each offering is paired with rich chocolate – the combinations are complex, delicious and truly satisfying!
