Job Summary:

The successful candidate will be a dedicated and experienced Head Kitchen Steward to oversee stewarding operations across its three kitchens. Reporting directly to the Executive Chef, the Head Kitchen Steward will be responsible for the cleanliness, hygiene, and smooth operation of all kitchen back-of-house areas. This supervisory role includes managing a team of kitchen porters, coordinating staffing rosters in conjunction with the Executive Chef, and ensuring the highest standards of sanitation and operational support across all culinary outlets      

Key Responsibilities

• Lead and manage stewarding operations across all three kitchens within Kilkea Castle Hotel.
• Supervise, train, and motivate a team of kitchen porters to maintain high standards of hygiene and efficiency.
• Develop and manage staff rosters in collaboration with the Executive Chef to ensure appropriate coverage across all outlets and events.
• Ensure proper cleaning and sanitation of kitchen areas, equipment, utensils, and service ware in accordance with HACCP and hotel standards.
• Maintain cleanliness and readiness of dishwashing stations, floors, bins, storage areas, and waste management zones.
• Oversee and report maintenance needs for all stewarding-related equipment.
• Monitor stock and use of cleaning chemicals and stewarding supplies; liaise with the Executive Chef for timely ordering.
• Conduct regular inspections to ensure adherence to food safety, health, and safety regulations.
• Promote sustainability by supporting waste segregation and reduction initiatives.

Skills/Requirements

• Minimum 2–3 years of experience in a similar supervisory role in a hotel or high-volume kitchen environment.
• Strong understanding of kitchen hygiene practices and HACCP compliance.
• Experience managing a team across multiple outlets or service points is preferred.
• Excellent leadership, organisational, and time management skills.
• Ability to work in a physically demanding environment and under pressure.
• Flexible schedule, including availability on weekends, holidays, and evenings as required.
• Minimum 12 months valid work permit required
